Rob Pierce, Bourke Street Green's Bar Manager, says that a Passionfruit Collins is sweet with just a hint of tartness from the lemon juice. This refreshing take on the classic Tom Collins cocktail swaps out simple syrup for a passionfruit liqueur made with real passionfruits - although you can add a dash of syrup if you like your cocktails extra sweet.

Passionfruit Collins cocktail recipe
Ingredients
- 30ml Four Pillars Rare Dry gin
- 30ml Chinola passionfruit liqueur
- 30ml lemon juice
- 5-10ml simple syrup, if desired
- Soda water
- Ice
- Lemon or passionfruit slice, to garnish
Method
- Pour the gin and passionfruit liqueur into a tall glass
- Add the simple syrup if you want your cocktail extra sweet
- Add the lemon juice and ice
- Slowly stir to combine
- Top up with soda water
- Garnish with lemon and/or passionfruit.
