Dreaming of a tropical getaway this summer? A cooling, fruity mocktail might just transport you back to your favourite holiday escape, especially if you don’t have the chance to jump on a plane to Cairns, Port Douglas, Bali or Fiji in the near future.

As we hit warmer weather, social gatherings and entertaining at home become more regular. So, whether you’re catering for a festive picnic with family or a barbeque at home with friends, a refreshing Topical Punch mocktail is a crowd-pleasing addition and a good way to cool down guests.

The team at Melbourne rooftop restaurant and bar Sojourn has shared an easy Tropical Punch mocktail recipe that combines popular fruit juices with sugar syrup, creating the perfect blend of summer sweetness.

RACV Club Bar Manager Rob Pierce shares some tips on elevating your Tropical Punch mocktail, including shaking the mocktail mixture in a Boston shaker and allowing the pineapple juice to create a nice foam.

“What I would recommend is building over ice. So, put all the ice into your glass and then double strain the cocktail over the top of the ice to create more of that lovely foam,” Pierce says.

Tropical Punch mocktail recipe

Ingredients

  • 45 mls orange juice
  • 45mls apple juice
  • 45mls pineapple juice
  • 30mls lemon juice
  • 15mls sugar syrup 

Method

  1. Add all ingredients into a shaker, preferably a Boston shaker. Shake vigorously.
  2. Double strain the mocktail over ice, creating a foam on top.
