There are a few reasons why sandwiches remain one of the most popular choices for picnic food – they’re simple to make, easy to transport and even easier to eat, especially when packed with tasty ingredients.
You can take your picnic to the next level with this gourmet sandwich, which only requires a little planning in advance for an epic result.
Pick up some chicken thighs from your local supermarket, and then marinate them in olive oil, garlic, paprika, salt and pepper for two hours. Cook them on a chargrill or barbecue and, voila, you have the main ingredient for a top-notch picnic snack.
For a substantial sandwich add lettuce and thinly sliced cucumber and red pepper to the sandwich recipe below. If entertaining at home, follow the recipe and cut each sandwich into three long pieces and arrange on a plate.
RACV City Club Executive Chef Jason Camillo says the secret behind his chicken sandwich recipe is the use of a sweet Japanese mayonnaise.
“This is an amazing finger sandwich, which I have always related to afternoon tea during spring racing,” he says. “Delicious and moist, the secret is using Kewpie Mayonnaise.”

Kewpie Mayonnaise is usually available at Asian grocery stores or in the Asian aisle of your local supermarket.
Once your sandwiches are made, if you're entertaining at home serve them immediately, or pack them in a portable cooler, grab a picnic rug and head to one of Victoria's best picnic spots for a relaxing day.
Remember, if you're going for a long drive or you won't be eating the sandwiches for a couple of hours, pack them in a portable cooler to prevent bacterial growth. This rule applies to any sandwiches containing cold cuts, meats, eggs, mayonnaise or dairy-based ingredients.

Easy grilled chicken sandwich recipe
Ingredients
- 250g chicken thighs
- 1 garlic clove, finely chopped
- ½ tsp smoky paprika
- 30ml olive oil
- 60g Kewpie Mayonnaise
- 2 eggs, boiled 8 minutes and cooled
- 1 lemon, zested and juiced
- ½ bunch chives, finely chopped
- Salt and pepper to taste
- 8 slices white bread
Method
- Marinate the chicken with olive oil, garlic, paprika, salt and pepper for 2 hours.
- Grill the chicken on a chargrill or barbecue until nicely caramelized. Reduce heat and cook through, about 72 degrees if you use a meat thermometer.
- Allow chicken to cool.
- Peel and roughly dice the boiled egg
- Roughly chop or shred the chicken and place in a bowl with mayonnaise, egg, lemon juice, lemon zest and chives. (You may not need to add all the lemon juice. You want the mixture to be creamy, but not runny.)
- Adjust seasoning with salt and pepper to taste.
- Refrigerate for 20 minutes.
- Thickly spread the mixture onto the white sliced bread, making sure you spread the mixture right to the edge of the bread. Top with another slice of bread.
- Trim the crusts using a serrated bread knife, taking care not to squash the bread.
- Slice each sandwich into 2 or 3 finger sandwiches, depending on your preference.
- Serve immediately, if at home, or pack in a portable cooler for a picnic.
