Sausage rolls are an Australian staple, and there’s nothing better than making your own, especially if you’re staying at home to watch the footy or have a family to feed.
When you pull them out of the oven, you’ll be lucky if these rolls make it to the table. The warm aroma of the flaky pastry will fill the kitchen, and meat lovers will crave that first bite.

How to make sausage rolls vegan
The addition of vegetables makes these rolls healthier, and the sauces, parmesan cheese and fresh parsley create those moreish flavours.
If you’re catering for vegans, then they don’t have to miss out. Substitute pumpkin or sweet potato for the mince, leave out the parmesan cheese, and instead of Worcestershire Sauce, which contains anchovies, try soy sauce.

Easy sausage roll recipe
Ingredients
- Puff Pastry Sheets
- 1 kg Sausage Mince
- 1 Medium Brown Onion, finely diced
- 1 Medium Carrot, finely grated
- 1 Medium Zucchini, finely grated
- 3 Cloves Garlic, minced
- 2 Eggs
- 30g Tomato Paste
- 50ml BBQ Sauce
- 40ml Worcestershire Sauce
- 75g Breadcrumbs
- 80g Parmesan Cheese
- 15g Fresh Parsley, chopped
- Black Pepper - to taste
- Sea Salt Flakes - to taste
- Sesame Seeds, to sprinkle on top
There's nothing like a homemade sausage roll straight from the oven.
Method
- Place diced onion, grated carrot, grated zucchini and garlic in the large bowl. Pour over the tomato paste, BBQ sauce, Worcestershire sauce and egg. Add in salt and pepper. Give it all a thorough mix with a whisk until everything is combined.
- Add in the mince, mix with the vegetables together. Sprinkle over the breadcrumbs, cheese and parsley and keep mixing until it all comes together.
- Cut the pastry sheets in half or third, depending on the size.
- Arrange the mince mix in a log shape along the center of each pastry sheet. Brush one long side of pastry with the egg and roll up to enclose filling.
- Cut each giant sausage roll into two normal sized ones, or six party sized rolls. Place seam side down on a baking tray lined with baking paper. Make sure each roll is at least 3cm apart so the pastry will puff properly.
- Egg wash each sausage roll and sprinkle on sesame seeds.
- Put the sausage rolls in the preheated oven and bake at 190C for 30-35 minutes, or until the pastry is golden brown.
